Rain…rain..go away, come again some other day!!  It feels like it has been raining for a month and to beat these rainy day blues I turn to FOOD of course.  The best cure for my “blah rain, blah my socks are wet again in my shoes” type of day is a cup or bowl of really good chicken noodle soup and a grill cheese sandwich. It sounds too easy right?  Well, try it.  I enjoy Panera Bread or Atlanta Bread Company, I know…I know…they are both chain restaurants but the food is good and there is wifi and both places smell like fresh baked bread.  All of these things make rainy days not so terrible.  So sit, relax, get some work done, and have some soup.  You will feel uplifted. Don’t want to leave the house? I understand.  Make some soup at home.  This is a super uncomplicated Chicken Noodle Soup Recipe that tastes great.


  • 2 1/2 cups wide egg noodles

  • 1 teaspoon vegetable oil

  • 12 cups chicken broth

  • 1 1/2 tablespoons salt

  • 1 teaspoon poultry seasoning

  • 1 cup chopped celery

  • 1 cup chopped onion

  • 1/3 cup cornstarch

  • 1/4 cup water

  • 3 cups diced, cooked chicken meat


  1. Bring a large pot of lightly salted water to a boil. Add egg noodles and oil, and boil for 8 minutes, or until tender. Drain, and rinse under cool running water.
  2. In a large saucepan or Dutch oven, combine broth, salt, and poultry seasoning. Bring to a boil. Stir in celery and onion. Reduce heat, cover, and simmer 15 minutes.
  3. In a small bowl, mix cornstarch and water together until cornstarch is completely dissolved. Gradually add to soup, stirring constantly. Stir in noodles and chicken, and heat through.

Now make yourself a grilled cheese.  After this, you will feel refreshed and ready to attack the rest of this rainy week!
